the only way I'll eat it

Raw broccoli. So good for you. So so good. I never realized until this year that you could make it taste not only half-way decent, but 120% decent, if that even makes sense. Like I actually have to ration it out and make sure I save some for lunch the next day. Your lives are about to get 22% more healthy than they already were. I'm really into percentages today. 

 
Broccoli Cranberry Almond Crunch Salad
Inspired by this recipe.

What you'll need:
(you could put the word "about" in front of each part of this recipe, I tend to not measure and just toss in whatever I feel like)
  • 1 medium-sized head of broccoli
  • 3-4 green onions OR 1/2 a leek OR 1/4 red onion, diced 
  • 1/4 c sliced almonds (I use TJ's raw)
  • 1/2 c dried cranberries
  • 2 T Greek yogurt
  • 1 T all-natural mayo (you can use vegan if you'd prefer)
  • 1 T lemon juice
  • couple dashes of hot sauce (currently I have Tapatío in my fridge)
  • 1 t honey
  • 1/2 t cumin
  • salt & pepper to taste
In a medium-sized bowl, mix the yogurt, mayo, lemon juice, hot sauce, honey, cumin, and s&p until it's all creamed together. Then add almonds and cranberries.  Chop the heck out of the broccoli and whatever member of the onion family you choose to use. Add these veggies into the main bowl and stir/toss evenly. That's it. Get ready for your veggie intake to increase.

2 cups fresh broc., 3 green onions, 1 cup red or purple cabbage, 3/4 cup craisens, 3/4 cup salted sunflower seeds, 5 fried crumbled bacon slices all in one bowl. Dressing: 1/8 cup sugar, 1/2 mayo, 1tbl red or rice vinegar. Toss together and even I like it!

Looks and sounds amazing! Is it sweet or spicy? I can't tell by the recipe lol! Both, maybe?

Amanda - I would call it tangy...? Sometimes the onions try and take over. But the dried cranberries bring a sweetness to it. The lemon juice/hot sauce combo gets balanced out by the honey as well... :)
