quinoa & football

I bet no one is wondering why I haven't posted a single photo/post about 30 for 30, but I'll tell all zero of you anyway. Taking pictures of myself every single day? Ew no thank you. That idea bombed by day two. And while I'm all about mixing up my current wardrobe in creative ways, I really just need to focus on bringing life to older pieces, and figuring out what I need versus what I want when it comes to new clothing.

And now I have time to play with my food.
Quinoa has always been the weirdest thing to me. It's a species of goosefoot that's closely related to species such as beets, spinach, and tumbleweeds. And somehow I always have a container of it laying around. And I finally figured out something pretty and delicious to do with it...

Black Bean & Quinoa Vegetable Salad
Inspired by Oh She Glows
• 1 cup of quinoa (uncooked)
• 1 14 oz. can of black beans
• half a cucumber
• 2 medium tomatoes
• quarter cup of cilantro
• handful of mini pepeprs

Lime Dressing
• quarter cup of lime juice
1 minced garlic clove
• quarter cup extra virgin olive oil
• half tsp. salt
• half tsp. pepper
• half tsp. cumin


Cook the quinoa, add the beans, chop the veggies and mix in the dressing.


In other news, I started watching Friday Night Lights from the very beginning. Perhaps it was watching the Super Bowl with a room full of screaming guys on Sunday that made me miss the television series that all my friends back home adore (and I've never seen before). Thank you, Netflix for allowing me to lose so much sleep over high school football drama. Love it nonetheless. 

Full eyes. Clear hearts. Can't lose.

Sounds pretty weird but I bet if you make it it will be tasty.

i made this tonight and it was DELICIOUS! the dressing is amazing and so easy...i'm ganna use that for a lot of things for sure. AND...i am one of the biggest suckers out there for fnl so this post was a personal fav! :)
